One pot dinners make life better.
2 garlic cloves, minced
1 small onion, chopped
1 tin chopped tomatoes
1 pepper, chopped
1 handful mushrooms, sliced
1 bunch basil, chopped
1 litre vegetable stock
2 tbsp olive oil
Place all of the ingredients into a large pan, except for the basil
Bring to the boil and simmer for 10 minutes, giving it a good stir every now and then. In the last few minutes add the basil.
After 10 minutes the pasta will be cooked, coated in a delicious tomato sauce and ready to serve.
This recipe is really versatile, the veggies can be switched around so you can add whatever is lurking in the back of the fridge!
