Cauliflower Salad with Peanuts and Coriander

A tasty, easy way to use eat cauliflower raw. Eat with tofu satay, rice and avocado, or however suits you. Thanks to HFW. Serves 4-6.


Ingredients

1 small to medium cauliflower (around 700g untrimmed)
1 lime
About 50g roasted, unsalted peanuts, coarsely chopped
1 medium bunch coriander, picked
A few sesame seeds (optional)

For the Dressing:
garlic clove (crushed), salt & pepper, 1tsp syrup, 1 tsp grated ginger, 1 tbsp rice vinegar, 1 tbsp toasted sesame oil, 1 tbsp soy sauce

Procedure

Trim stalk and leaves from the cauli and chop florets into smallish chunks. Whizz in food processor until very finely chopped an rice-like.

Seperately, combine dressing ingredients.

Pour the dressing over the cauli, stir and season to taste. Add a squeeze of lime, top with peanuts, coriander and sesame seeds, and serve.
