Spelt and Chickpea Stew

Ingredients

200g spelt grain
2 tbsp olive oil
2 carrots, 1 onion and 1 stalk celery, diced
4 cloves of garlic, chopped
2 bay leaves
2 tsp ground cumin
2 tsp paprika
A pinch of saffron (optional)
1 litre vegetable stock
1 tin of chopped tomatoes
1 tin of chickpeas
A squeeze of fresh lemon juice
Sea salt & black pepper
A handful of flat leaf parsley, roughly chopped

Procedure

Soak spelt 3-4 hours. Rinse, drain.

Heat oil in a soup pan and add onion, carrot, celery, and garlic. Season with salt and pepper and cook for 5 minutes. Add bay, paprika, cumin, saffron (if using), spelt, and veg stock. Bring to boil, reduce and simmer ~30min until spelt is tender.

Add the chopped tomatoes and chickpeas and simmer for 25 minutes. Discard the bay leaves, add the lemon juice and season with salt and pepper. Stir in the chopped parsley just before serving.
