The proportions of stock and Soup Mix used can be varied according to how thick you like it. The combination of smooth sweetness from the split peas, the more robust flavour of the lentils and the body of the barley make it a hearty and satisfying soup. This recipe is just one suggestion. By varying the combination of herbs, spices, sauces and stocks, you can make this a completely different soup everytime!
1 small onion
800g (usually 2 tins) tinned tomatoes
2 tbsp (30ml) oil
4oz (100g) Unicorn Soup Mix
11/2 pints (9OOml) vegetable stock
1 tsp dried thyme
1 tsp yeast extract
Salt and pepper to taste
Chop the onion. Heat the oil in a large saucepan and saute the onion until transparent. Add the remaining ingredients, cover and simmer for 30 minutes. Alternatively pressure cook for 10 minutes.
