Makes 8. Can be scaled up easily -ideal for making in large batches & then frozen for a quick meal.
3 medium sized potatoes, cut into chunks
250ml cold water
Spoonful of margarine
Handful of fresh/frozen peas
½ tin of sweetcorn
1 tsp dried thyme
1tsp dried sage
½-1 tsp of cayenne pepper
Salt and pepper
Boil your potatoes for 15-20 minutes until soft.
Drain and allow to cool slightly, then mash with a bit of margarine.
Add the water to the Sosmix and let stand for 10 minutes.
In a bowl mix the Sosmix and mashed potato together.
Add salt & pepper to taste along with sweetcorn, peas, herbs & spices.
Make into cake shapes & shallow fry or oven bake until crispy.
