Cauliflower and Red Lentil Curry
Another great cauliflower recipe....
250g red lentils
1 red onion
4 cloves of garlic
3 tsp cumin
some Vegetable or Olive oil
Fry the spices and onions in a couple of tablespoons of vegetable/olive oil. Add the florets and red lentils, infusing the spices.
Cover the mixture with cold water, bringing to the boil, then simmering until the lentils are cooked. Add salt at the end (otherwise it will prevent the lentils from cooking).
Adjust seasoning and serve with a crispy green salad. Easy ‘n’ delicious!
