Peanut Broccoli Stew

Everyone that goes to Gambia wax lyrical about Gambia’s delectable peanut stews. Those Gambian delights can now be replicated by vegetarians back here in England. This is easily done by steaming fresh broccoli in our Potent Peanut sauce and serving it on a bed of rice, cous cous, or Jollof Rice.


Ingredients

A large head of broccoli
3 desert spoons of vegetable oil
1/2 teaspoon of salt
One vegetable cube
One jar of Naija Potent Peanut Sauce
100ml of warm water

Procedure

Pour jar of peanut sauce into a saucepan and stir in the warm water to loosen the sauce. Add the salt, stock & vegetable oil. Cover with a tight lid and gently heat, stirring when needed.

Whilst cooking, steam the florets and cook the cous cous or rice. Pour the sauce over the broccoli and serve.
A truly delectable feast!
