3 bananas, mashed
350g self raising flour
100g pitted dates
1 Tbsp baking powder
100 ml date syrup
275 ml water
135 ml sunflower oil
Preheat the oven to Gas mark 5/190C/375F.
Line or grease 12 hole muffin tin or case.
Chop dates, boil the water, pour on dates, leave to soak.
Sieve flour, baking powder in a bowl and stir.
Drain water from dates, put it in a jug with syrup and oil. Mix together.
Add liquid to dry ingredients little by little, mixing
thoroughly. Beat until smooth. Fold in the mashed bananas and dates. Spoon into muffin cases.
