Borscht (Seasonal Rooty Soup)

Ingredients

2 onions,
2 large carrots,
2 large potatoes,
2 beetroots,
1/2 Savoy cabbage,
1 tin of tomatoes.

Procedure

Sweat onions, peel and dice rooty vegetables and add them all together.

Cover with stock and boil until roots are soft.

Shred cabbage and add this and tomatoes and cook for a further 5-10 minutes.

Leave chunky, season with salt pepper and a dash of balsamic vinegar. Garnish with dill.
