Roasted Courgettes, Broad Beans and Pasta

Here's a quick dish if you're in a rush....


Ingredients

2 courgettes, cut into big wedge-shaped chunks
A big handful of broad beans, podded
Lemon juice
Olive oil
Salt and pepper
200g Pasta
Mayonnaise

Procedure

Toss courgettes with a quick marinade of olive oil, salt and lots of lemon juice and black pepper. Barbecue on skewers, or roast for 15 minutes at 220C (until edges start to brown but still firm).

Meanwhile, cook pasta according to packet and steam broad beans for 2-3 minutes - not too long, especially if they're young.

Mix it all together with a a dollop of mayonnaise, and salt to taste.
